Peanut Butter Oatmeal Cookies

1/2 C Peanut butter
1/2 C Shortening
1 C Brown Sugar (packed)
1 C White Sugar
2 Eggs
1 T Vanilla
1 1/2 C White Flour
1/2 t Salt
1 t Baking Soda
1 1/2 t Cinnamon
3 C Old Fashioned Oatmeal

Cream peanut butter, shortening and sugars add in eggs and vanilla, beat well. 
Sift together remaining dry ingredients, except oats, and add to first mixture beat 
well. Stir in oats. Drop by rounded tablespoon onto greased sheet or silicon mat 
and flatten with hand to approx 3/8 inch. Bake at 350 for 11 - 12 minutes. Cool 
on rack, enjoy!!
